About Dr. Isabell Rothkopf
Dr. Isabell Rothkopf studied Chemical Engineering at Karlsruhe Institute of Technology (KIT) and earned her Ph.D. in Food Technology from TU Munich in 2023.
She has been with Fraunhofer IVV since 2013 and has led chocolate research and the IVLV Chocolate Technology Working Group since 2017. She serves on the Steering Board “IG Cocoa and Chocolate” at Swiss Food Research and is a founding member of the Round Table Hazelnuts.
Since 2018, she has lectured on chocolate technology at HSWT. Her research focuses on fat crystallization, fat migration, conching, and processing plant-based raw materials for chocolate.
