Sugar is one of the most multifunctional ingredients in food, shaping taste perception, structure, browning, fermentation and processing behavior. Replacing it 1:1 is therefore not a question of sweetness alone, but a complex engineering challenge.
In this tasting session, All But Sugar invites you to experience what happens when sweetness is re-engineered from the ground up. By combining data science, process innovation and application technology with research in gastroenterology and nutritional science, their platform technology recreates sucrose’s taste, texture and sweetness behavior while avoiding the side effects commonly associated with conventional sugar alternatives.
Participants will be guided through a sensory chocolate tasting demonstrating how All But Sugar’s platform technology replicates the full taste experience of sucrose including mouthfeel, sweetness onset, temporal sweetness profile, and the characteristic reward response commonly linked to sugar consumption.
