The event

At this year's special Ingredients area, visitors can not only discover numerous exciting new ingredients and flavours, but also talk to innovative start-ups that have, for example, recreated sugar in a modular system, processed old bread into drinks and snacks or transformed an ultra-healthy traditional Asian dish into snack form.

Diana Drewes from the future agency Haute Innovation will talk about the social megatrends of sustainability and health with AllButSugar, Rebread and That's Kimchi after a brief introduction to the special Ingredients area.

AllButSugar is a FoodTech start-up from Vienna that has developed a modular system for sugar alternatives. With the help of modern technologies, sugar properties are sustainably customised one-to-one without the use of artificial sweeteners.

Rebread is a start-up from Poland that processes old bread or surplus goods from large bakeries into functional drinks, ready-made baking mixes or snacks. Around 15 per cent of bread production never reaches the end customer. A considerable amount that is now being used.

THATs KiMCHi from Hamburg makes healthy snacking on the go possible with its kimchi chips. The fermented vegetables are said to have intestinal health-promoting properties due to the lactic acid bacteria they contain. According to scientific studies, regular consumption of kimchi is even said to prevent cancer.

The Sustainability Talk is a great opportunity to find out more about the history and future plans of the food start-ups.
